Ever wondered what a mysterious DIY Man has for breakfast on a snowy Sunday? No, neither have I – but I am going to tell you about it anyway. Take a oven dish that is safe for the stove top as well, put it on a medium heat and head up a knob of smokey butter. Cut up some bacon and fry it off in the butter, when it is brown add a pre-cooked sliced potato and about 6 halved cherry tomatoes. Brown off the potato and add a tin of baked beans with half a cup of fresh baby spinach leaves and some dried herbs of your choice.
Leave this to cook for a few minutes before making wells to crack eggs into (Mystery DIY Man used 2 eggs – he tells me he’s a growing boy). Once the eggs have cooked for a minute or two in the beans sprinkle some grated cheese over the dish and put it under the grill until the eggs are cooked and the cheese browned.
Before you can eat the breakfast crack some pepper over it, sprinkle some salt and top with a spoonful of aioli and some BBQ (if you’re down with that).
You could also add some whole breakfast sausages if you wanted, and if you’re cooking for more people add an extra egg per person.
